Do you love cornbread as much as I do? Yes, no? Maybe so? 🙂
I grew up living off of cornbread and other southern staples, so you can imagine that now I get a huge hankering for the southern comfort food I grew up loving dearly.
My mama’s cornbread was the easiest recipe I’ve ever seen or made, and it also happened to be my favorite cornbread recipe of any that I have ever tried. Gotta love mama’s homemade cookin’! Sure, she used a few shortcut ingredients, but that’s okay. Good cornbread and cornbread muffins don’t need to be made completely from scratch, and my healthier vegan Spicy Pumpkin Cornbread Muffins recipe gives a nice little nod to that gesture too.
My favorite way to eat cornbread has always been dunked in soup, especially my mama’s vegetable soup which I still eat some rendition of today without the meat. Although, I’ll admit I also used to love cornbread muffins just slathered with melted butter and sprinkled with black pepper. Obviously, things have changed in my years of eating traditional southern foods to eating a healthier diet now (that’s a lifestyle choice for me, not a “diet”), but that doesn’t mean I don’t enjoy my southern staples made healthy occasionally.
Because a girl never forgets her southern roots! 🙂
So, this cornbread idea came to me this last month when I was asked to contribute a recipe to SoFabFood where I’m sharing this recipe for the Halloween season. We were asked to create a “spooky” scary recipe for Halloween, and I knew exactly what I wanted to make: These Spicy Pumpkin Cornbread Muffins!
These muffins are speckled with real jalapeño peppers, black pepper, and given a gorgeous orange glow thanks to the turmeric they have. Oh yum! This is the perfect savory spicy combination and it’s also excellent when used in cornbread muffins.
Oh, and if you must, dabble on some vegan butter (such as earth balance) for a classic flavor that really hits home. Vegan butter isn’t oil-free, but for tradition’s sake, some of you may like to may an exception. 🙂
