I’d be completely remiss if I let the month of St. Patrick’s Day pass without sharing a healthy recipe with you based off my all-time favorite ice cream… mint chocolate chip!
Now, I get that the glowing green color in the typical carton of mint chocolate chip ice cream doesn’t really come from a natural green color, but I wouldn’t touch the white (uncolored) varieties with a ten-foot pole.
Any mint chocolate chip ice cream I used to eat had to be green. No ifs, and’s, or buts about it.
It’s true that my favorite color as a child was green, but it also just felt more “authentic” to have the green varieties of mint chocolate chip ice cream as odd as that sounds considering a host of food dyes make up the glowing green ice cream I ate so much of as a young child and teen.
As I got older, however, I started loving something much more than just mint chocolate chip ice cream… MOCHA mint chocolate anything.
I guess you could say I discovered coffee and that was that.
So I used to order this heavenly, sugar-filled concoction from Baskin Robbins called the Mocha Blast which was a cold, creamy frosty-like milkshake. I had at least one of those every single week if I could by the time I was 18 years old. To say I loved them is the understatement of the year.
And then I realized at 19 that sugar didn’t really love me back like I had hoped it would, at least not the refined sugar that I was eating. So goodbye artificially colored, sugar-filled mint chocolate ice cream and Baskin Robbins. I thought I’d die, to be honest, but I forged ahead in the name of health and never looked back.
I actually came to love the taste of REAL food 1000% better than refined sugar and the sugary sweet stuff makes me sick to my stomach when I think of it now. It’s been 13 years since my sugar-filled ice-cream eating days, but that doesn’t mean I haven’t had any fun or sweetness in my life since then. I just got to work in the kitchen and started crafting up my own tasty, sweet recipes that also made me feel good!
Before we get into this recipe I’m sharing today, however, I have to tell you how it came about.
See, I never had the actual McDonald’s Shamrock Shake because it became trendy way after I gave up sugar. But I can tell you that I would have loved it if I had known about it back in the day because I love coffee, mint, and chocolate in most any way I can get it. We go way back as you can see!
So this year, I decided to whip up not just a healthy Shamrock Shake which you can find all over the internet, but a Mocha Mint Superfood Shamrock Shake!
Because isn’t a mocha-flavored superfood Shamrock Shake 10 times more fun and interesting than a regular Shamrock Shake?
I think so! But then again, I’m a java nut so there you go. 🙂
I used some of my absolute favorite ingredients in this shake because it’s in honor of St. Patty’s Day and we deserve nothing but the best for such a special day.

Starting with raw cacao nibs!
This is where all chocolate comes from, my friends!
Raw cacao nibs are cacao beans (cocoa beans) that are simply broken into tiny pieces. Chocolate bars and chips that you know and love come from melted cacao nibs after they’ve been mixed with sugar and normally oil or milk. Cacao nibs contain the natural cacao butter and cacao powder which are separated later during processing to make chocolate products. So cocoa and cacao powder all come from these teeny, marvelous little nibs.
Yes, the sweeter chocolate, sugar-filled stuff might be good, but raw cacao is where it’s at you guys.
This is real, raw, unadulterated chocolate in all its wonderful glory!
Note: Raw cacao is not sweet because all cacao beans are fermented in the making of chocolate which results in that potent, chocolate flavor. In fact, cacao contains natural probiotics because it’s fermented in nature and contains notes of a fruity, wine-like chocolate flavor as a result. Pretty great, right? 🙂
That means cacao isn’t just a natural mood-booster and beauty food, but it’s also great for your gut… especially compared to regular chocolate filled with sugar (which can mess with your gut and digestion).
Cacao is also the highest antioxidant-containing food in the world!
Raw cacao is also high in amino acids and it’s high in the minerals iron, copper, and magnesium which are vital to metabolic, brain, nervous system, blood, bone, and heart health. Cacao is also one of the best sources of the minerals sulfur, which is phenomenal for skin health and beauty. Sulfur is also a powerful nutrient that helps detox the liver on a daily basis.
Cacao is also cholesterol-free and rich in monounsaturated fatty acids which are some of the best types of fat you can eat for your heart, brain, and metabolic health.
But as lovely and marvelous as chocolate is, that’s not all that’s in this shake recipe. Because you can’t have a Mocha Mint Superfood Shamrock Shake without some mint, some mocha, and some green goodness!
I’m using my absolute favorite plant-based protein and superfood nutritional shake in this recipe–Vega One Mocha flavored. I hope they don’t change this product, because it’s my absolute favorite out of all the plant-based protein options that doesn’t mess with my stomach. Fingers crossed!
You could easily use a chocolate plant-based protein and a little instant coffee in this recipe if you don’t have mocha flavored protein, though.
For today’s recipe I also used some peppermint essential oil and some organic spinach for a boost of green goodness which you can’t taste, I promise.
Tip: I always suggest people new to green smoothies and shakes use spinach instead of other greens because it’s easily hidden and has naturally sweet undertones that are tasteless once blended with a little fruit and natural sweetener, like stevia. But if you’re truly terrified of using spinach, you can leave it out if you like.
I used a bit of frozen banana to sweeten this shake, which I normally don’t do because I feel the banana is way overused in smoothie recipes. However, here, the mint and chocolate cover up the banana flavor and it adds a wonderful, creamy and frosty texture that’s pretty hard to beat, I have to admit.
You can use whatever options you prefer to sweeten the recipe if you don’t want to use a banana, though. One or two Medjool dates would work really well in this recipe as another whole food, plant-based option. Also, Vega One is naturally sweet since it has real stevia leaf in it, so that’s something to keep in mind if you’re using another product.
Finally, I topped off this tasty shake with a nice big dollop of some unsweetened almond or coconut yogurt (or unsweetened vanilla), some Navitas Organics cacao nibs, and then I popped the glass in the freezer for 20 minutes to let the shake get all nice and thick and slightly frozen. Just like my beloved mint chocolate chip ice cream and Mocha Blast used to be! 🙂
Plus, this recipe is full of nutrition!
With the ingredients I used, this recipe has 25 grams of protein, it’s loaded iron containing 50% of your daily iron needs, it’s rich in magnesium with 70% of your daily magnesium needs, it’s full of B vitamins, including folate and vitamin B6 which are important for your nervous system, heart, and brain. It’s also jam-packed with potassium which lowers blood pressure levels and helps combat hypertension and complications that can lead to heart disease.
Did I mention it means you get to have raw chocolate, mint, and coffee in the same recipe AND it means you get to say you got in your greens today too?
Don’t thank me, just make this shake! 🙂
- 1 cup unsweetened non-dairy milk, such as Silk unsweetened vanilla almond milk
- 2 tbsp. raw cacao powder, such as Navitas Organics raw cacao powder (or sub 2 tbsp. cocoa powder)
- 1 cup loose-leaf spinach (or ½ cup frozen spinach)
- ¼ a frozen banana
- dash of stevia powder (about ¼ tsp.) or your favorite option (such as a date or more banana)
- a tiny drop of peppermint extract (I used peppermint essential oil) or fresh mint leaves
- 1 scoop of a chocolate plant-based protein (or vanilla plant-based protein + 1 tbsp. cacao powder)
- ½ tsp. organic instant coffee (regular or decaf)
- 4-5 ice cubes
- optional toppings - unsweetened yogurt (such as coconut yogurt) and raw cacao nibs
- Add all the ingredients except the toppings to a blender in the order listed.
- Blend on low, then progress to high until thick and creamy.
- Pour/scoop into a glass and leave enough at the top to add a dollop of unsweetened non-dairy yogurt and some raw cacao nibs.
- Freeze for 20 minutes to let it set up and get thicker as well as more frosty and tastier. Plus, freezing it helps bring out the sweetness even more!
- Enjoy with a large, wide straw or use a spoon--your choice!
I realize this recipe isn’t the same as eating sugar, but it really is SO good and it makes you feel good too.
