Recipes like this remind me of why I do what I do. There is so much nutrition in one serving of this Immunity-Boosting Green Smoothie and to think that years ago, there’s no way I would have consumed one of them. I used to see healthy foods–especially green foods–as a waste of time, money, and punishment to my taste buds. Thank goodness I now know differently!
My philosophy now?
This: Healthy foods–and especially green foods–are the best foods to spend my time, money, and taste buds on because of the many benefits they provide for the body and all the things they can help prevent. And I now see the blender as a vehicle of opportunity for all of us to take nutritious foods and use them to create one, healthy, nutrient-dense meal all in one glass, whether that means making a super green smoothie or even something a little less green. 🙂
Gorgeous, vitamin and mineral-rich greens and naturally sweet, antioxidant-rich fruit, amino acid-rich plant protein, and even some healthy, omega-3 fats are in this smoothie that all help energize the body, support the immune system and are great digestion, and may even help keep those winter bugs away for good if consumed on a regular basis.
So, what does this smoothie taste like, you might ask? It’s naturally sweet thanks to the fruit, and don’t worry because the spinach is undetectable thanks to the zestiness of the citrus, slight tartness of the cranberries (one of my favorite holiday superfoods), and natural sweetness of the apple, pineapple, and banana. There’s also some of my favorite plant-based protein and superfood nutritional shake in this recipe, Vega One!
There’s even a new version of Vega One that is stevia-free for those of you out there who don’t like stevia or prefer not to use it all the time for whatever reason. Vega One Natural Stevia-Free has a mild flavor and is packed with superfoods that support a healthy immune system, plant-protein, and healthy fats from cold-milled flax seeds. It’s also rich in vitamins, minerals, and a great source of fiber!
You can use any type of plant protein you want in this smoothie, but I always suggest reading the ingredient list on whatever one you choose to make sure the ingredients are made from whole foods, not synthetic vitamins and minerals, refined sugar, added oils, and chemicals you don’t recognize. Vega One checks all of those boxes off for me and is something I consume daily for great health, all the way around. My favorite flavors are the Chocolate,Mocha, and the regular Natural which are all sweetened with pure stevia extract. The new Natural Stevia-Free version of Vega One is also great too, just less sweet.
This smoothie can be made with any kind of apples you wish. I used an organic Gala apple in the recipe, but Fuji, Honeycrisp, or a tart, crisp Granny Smith apple would work well here too. Or, switch out the orange for a tangerine, clementine, or another type of citrus. Oranges and apples are two fruits I always keep on hand, but get creative and see which types you enjoy!
Here are the benefits of the ingredients in this Immunity-Boosting Green Smoothie:
Apple – Rich in fiber, the antioxidant quercetin that supports immune system health, vitamin C, and the mineral potassium. Apples are also great for reducing stress thanks to their vitamin C content. They can also help lower blood sugar and blood pressure levels thanks to the fiber they contain. Try using whole apples instead of apple juice in your smoothies since the fiber can help lower the spike to blood sugar levels and is overall better for your body.
Orange – Oranges are great for immunity as we all know due to their high vitamin C level. What most people don’t know, however, is what great of a source of pectin fiber they are. Pectin is the fiber that is well-known in apples that helps slow digestion and lower blood sugar levels while also keeping us full. Oranges are also great to lower blood pressure levels since they are high in potassium. They also contain many antioxidants aside from vitamin C that are great for skin health.
Spinach – Spinach is rich in chlorophyll, the green pigment in plants that alkalizes the blood and supports overall blood health. Chlorophyll also helps support clear skin since it fights inflammation that can lead to breakouts and redness. Spinach is also a great source of vitamin E, fiber for healthy digestion and blood sugar levels, minerals including magnesium and potassium, the antioxidant zeaxanthin which has been shown to improve eye health, and it even contains some protein to boot! Choose loose leaf spinach or frozen spinach; either will work, but organic spinach is best.
Cranberries – Tart, slightly sweet, low in natural sugar, and loaded with beauty-boosting antioxidants, cranberries are one of my absolute favorite fruits of all time. These berries have amazing properties for fighting unhealthy types of bacteria in the body and are excellent sources of vitamin C. You can buy frozen or fresh cranberries, but don’t use dried here since they typically contain added sugars and oils.
Plant Protein – Plant protein is anti-inflammatory and completely free of dietary cholesterol since it doesn’t come from animals (our bodies make cholesterol for hormones on their own). Choosing a high-quality plant protein like Vega One is also a great way to sneak in more plant protein nutrition, support healthy blood sugar levels, and give your body a dose of plant-based amino acids to support the body. Vega One is also more than just protein since it contains superfoods and natural sources of vitamins and minerals along with healthy omega-3 fatty acids from plant-based flax and hemp.
Finally, I added a little banana and pineapple for a little more natural sweetness (which are also great for reducing inflammation and improving digestion, plus wonderful sources of vitamin C) and a small touch of cinnamon, ginger, and cayenne pepper which are also excellent for supporting the immune system, improving digestion, and reducing inflammation. The spices also bring out the sweetness in the other ingredients; you can leave them out if you wish but give them a try if you can!
- 1 cup unsweetened non-dairy milk (I love Silk unsweetened almond, cashew, or light soy milk)
- 1-2 cups loose leaf spinach
- 1 frozen, very ripe banana
- ⅓ cup frozen pineapple cubes
- ½ an apple, chopped and sliced*
- ½ an orange, peeled and seeds removed*
- ¼ cup frozen or fresh cranberries
- 1 tbsp. chia seeds for extra omega-3's and fiber
- 1 scoop plant protein/nutritional powder ( I used Vega One Natural)
- a tiny dash each of cinnamon, ginger, and cayenne
- optional if you want for more sweetness: 1 Medjool date (pitted)
- 1 cup of very cold, filtered water
- Add all the ingredients to the blender in the order listed and blend on low then progress to high.
- Blend for 10 seconds or so to make sure all the frozen fruit is mixed well.
- Pour into your favorite glasses since it makes two and enjoy with a friend or loved one, or save the rest of the smoothie for later in a mason jar and keep in the fridge.
- Feel free to add a garnish of a few raw nuts or some coconut, or an oil-free granola. Or, just consume it plain!
**Want it thicker so you can eat it with a spoon? Use only ½ cup of cold water instead of 1 full cup.
