Naturally Sweet Fig and Almond Energy Bites are full of protein, zinc, iron, potassium, magnesium, calcium, fiber, and are the perfect healthy treat! They’re also easy to make and are free of added sugars.
No-bake recipes are probably one of my favorite types of recipes to make. One, because there’s no need to heat up the entire kitchen by turning on the oven just to make yourself a treat. Two, it’s almost instant gratification when you see the recipe come together. And three, because (most) no-bake recipes are super simple to make.
No-bake recipes tend to be a bit messy, especially energy bites and bars. Energy bites are incredibly healthy as they’re made up from raw nuts, seeds, and fruit. All super nutritious ingredients that make you feel energized from head to toe! And while the recipe for energy bites is typically very easy, making them requires a bit of hands-on, dirty work.
Rolling the dough into balls, bites, or bars always reminds me of when my mom would let me hand-mix cookie dough as a kid. And sprinkling on the final touches (in this case, coconut shreds) always makes me want to eat a few bites right away, even before the recipe has had time to set.
After all, taste-testing is important, right? 🙂
I’ll admit… I’m a bit messy in the kitchen anyway.
Anyone else with me here?
Drips, spills, sprinkles, you name it. So I like to clean as I go, which means I’ve always got a handy dish cloth or two on hand so that I can wipe up any mess I make as I go.
Thanks for this tip, Mom! 😉
In all seriousness, keeping my workspace tidy as I work in the kitchen helps to keep the creative process less stressful, and it means there’s much less of a mess to clean up at the end.
Speaking of which, I recently bought the new Scotch-Brite® Scrubbing Dish Cloths at Walmart this week when I was picking up the ingredients for this recipe and a few groceries. And, they were the perfect handy cleaning companion when I made up these delicious, healthy energy bites!
Naturally Sweet Fig and Almond Energy Bites are perfect to make when you have a few minutes and want a treat but just don’t feel like messing with pots, pans, or heating up the whole kitchen with the oven. And, although they can be a little messy to work with, they’re totally worth it and come together quickly.
Plus, if you clean as you go, they’re one of the easiest things you can make!
These bites are full of nutrition too! Rich in iron, zinc, calcium, potassium, fiber, protein, and full of flavor from simple ingredients, they’re the perfect way to crush a sugar craving and will help steady your blood sugar and blood pressure levels thanks to the fiber, protein, magnesium, and potassium they contain.
So make some of these bites when you get a few minutes, you won’t regret it!
- 8 pitted Medjool dates
- 8 dried figs (any kind works), stems removed
- ⅓ cup raw almonds
- ¼ cup shredded coconut
- ¼ cup raw hemp seeds
- ¼ tsp. vanilla (alcohol-free extract or raw vanilla bean powder)
- (optional): 2 tbsp. freshly squeezed orange juice for a fresh, citrus flavor (not store-bought)
- Soak the dates, figs, and almonds overnight in a bowl covered with some cold water. Use enough water just enough to cover them.
- The next day (or at least 6 hours later), drain the water off the dates, figs, and almonds. Discard the soaking water.
- Put the dates, figs, almonds, coconut, hemp seeds, and the vanilla in a food processor in that order. Also, add the 2 tbsp. fresh orange juice if using (don't use store-bought since it's high in sugar.) Process until you get a thick dough like cookie dough.
- Roll the dough into small bites (balls about 1 inch thick) into a round shape and place on a glass plate spread evenly apart. Sprinkle with extra coconut if desired.
Feel free to substitute the hemp seeds with more almonds or another raw nut of choice if you don't have any on hand. You can also leave out the coconut if desired and use more almonds. These bites are versatile, use what you wish!
